May 2011. One of Melbourne's most revered hotels, the Botanical, reopened its doors in November 2010 after a significant renovation and has emerged as one of Melbourne's most exciting dining and drinking destinations.

Superbly located adjacent to the famous Botanic Gardens, the Botanical underwent a $4 million renovation by leading Melbourne design firm Webb +, transforming it into a multi-faceted venue complete with formal restaurant, informal wine store and café, a bar and lounge for more serious drinkers and the alfresco-inspired "Archer Room’ for casual dining and private events.

"With the Botanical, we have created an all inclusive venue combining a variety of quite separate but interlinked spaces, catering for every occasion," says General Manager, Frederic Blevin.

A major drawcard of the new Botanical is Executive Chef, Cheong Liew OAM, who oversees the complete food offering.  Famous for his innovative style of cooking, Liew’s highly individual approach is greatly influenced by his Malaysian heritage and the discovery of different cuisines, their cultural roots and cooking techniques. He is regarded as one of the most influential chefs of his time and oversees the complete food offering at the Botanical.

Liew believes that "food tastes better shared" and presents a generous, family style menu in the restaurant, Wine Store and bar. It is a celebration of modern Australian cuisine with a South East Asian twist, incorporating only the highest quality, sustainable produce.

"Whatever the occasion, or wherever people choose to dine at the Botanical, I want them to experience the best possible produce of the season, cooked simply and from the heart," says Liew.

The restaurant has a capacity for 90 diners including a Chef's Table, crafted from a fallen tree in the Botanic Gardens.  It provides a formal dining experience with the gravitas of dark-stained solid oak tables lightened by the edgy contemporary artworks of Melbourne artist, Janenne Eaton. 

The Botanical's restaurant is open for lunch and dinner seven days, the Wine Store from 7am till late seven days and the Bar from 12noon till late seven days.
